Chef’s Christmas: Festive cocktail with gin and herbal spices

Serving a fantastic Christmas dinner this year? Get inspired by Pillows Chef's Christmas! Especially for Christmas, bar manager Nick Vrielink of Fitz's Bar at Pillows Hotels Amsterdam has created a festive cocktail with gin and Christmas spices.

Ingredients

-        60 ml Bombay Sapphire Premier Cru
-        400 ml wine
-        4 teaspoons balsamic vinegar
-        2 rosemary twigs
-        2 thyme twigs
-        2 bay leaves
-        1 teaspoon of cloves
-        1 teaspoon of 4 seasons pepper

Necessities

- Pan
- Fine mesh filter
- Martini /coupe glass
- Strainer


Preparation

Wine reduction

1.       Mix the wine, balsamic vinegar, rosemary, thyme, bay leaves, cloves and pepper in the pan and cook until two-thirds is reduced.

2.       Remove all the spices and herbs. Filter this through a fine mesh filter.

Cocktail

1.       Add 60 ml of gin and 10 ml of the wine reduction in a chilled martini or coupe glass. Stir for about 30 seconds until the mixture is cold. Strain afterward.

2.      Garnish with rosemary twigs and lemon peel.
